Coleto Creek Bourbon Whiskey

Our latest creation is Coleto Creek Bourbon.  Starting with a select mash bill made of corn, rye and malted barley, this whiskey is distilled to under 160 proof.

 

After aging in traditional bourbon barrels, we then transferred the whiskey into California Cabernet wine barrels.

Our bourbon is limited in production and our first run in 2019 was only 2,400 bottles and shipped exclusively to Texas.  Coleto Creek Bourbon Whiskey is 86 proof, perfect for sipping or creating a great cocktail.

High Rye Mash Bill

Coleto Creek Bourbon is distilled from a blend of corn, rye and malted barley.  Our exact recipe is proprietary, but we use a higher rye base to give extra flavor.  Of course, to be bourbon we use at least 51% corn as well.  The grain is heated and cooked before yeast is added to create the fermentation and eventually the alcohol.

Current batches have been distilled to perfection by a world class mid-west distillery.   Future batches will be distilled in our Texas facility.

Aged then Finished

What makes Coleto Creek Bourbon different is our finishing process.  Like all bourbons, the whiskey starts by being aged in a new American oak barrel.  After many years, we transfer the whiskey to rest in premium California Cabernet wine barrels for several months.  These barrels provide additional flavor and smoothness to the whiskey, making it truly unique!

Blended and Bottled in Houston, Texas

After distillation, barrels are shipped to age in Houston.  After aging, we transfer the whiskey into the wine barrels and then eventually blend and bottle each batch by hand.  Like all our whiskey’s, each batch is slightly different, making whiskey is an art and a craft!
